[00:19.86]The Cattlemen's Beef Promotion and Research Board [00:23.70]plans more than 300 changes [00:26.74]to the familiar words found on meat labels. [00:30.97]Meathead Goldwyn writes for the Huffington Post website. [00:36.25]His own website, Amazing Ribs is about barbecue, [00:40.83]grilling, and outdoor cooking. [00:43.41]Meathead, as he called himself, [00:45.75]says meat labels have always confused [00:49.48]as well as informed. [00:51.82]The food writer sees some improvement [00:54.61]in the proposed labels, [00:56.30]but he says some planned label changes [01:00.03]will continue years of confusion. [01:03.52]"Pork butt, for example, [01:04.71]does not come from the part of the animal most people think. [01:09.29]It doesn't come from the butt [01:10.49]which is flying(?) for the rear end, [01:12.44]it comes from the shoulder. [01:13.98]And instead of naming it "pork shoulder" [01:16.97]which would be really logical, [01:19.11]they now call it "Boston roast", [01:22.53]so they went from confusing to meaningless." [01:27.11]Today's common names developed overtime, [01:30.39]as meat cutters used terms that described parts of animals, [01:35.87]as well as cuts made by butchers. [01:38.45]After the new changes, [01:40.79]people may have to read more of the label [01:43.48]to know what kind of meat they are buying. [01:46.72]For example, labels currently say "beef" [01:51.04]or "pork" on the first line. [01:53.23]The new labels will use smaller print [01:56.83]and will identify the animal on the second line. [02:00.53]Also, cuts of meat that were traditionally [02:04.06]names for beef products like rib steak, [02:08.29]will now also being used for pork, [02:11.08]that means a rib steak could come from either a cow or a pig. [02:18.69]The labels for chicken and other poultry will not change, [02:24.21]labels for fish will not change either. [02:27.54]Meathead questions the use of French words [02:31.08]that will replace the traditional descriptions of some cuts of meat. [02:36.20]"As that, I mean why is that, what I mean, [02:42.77]you know, at least, somewhat descript it. [02:45.21]And 'bottom round' is now 'maralow steak', [02:49.19]that's sounds like a way to raise the price, [02:52.72]you know, calling it a 'maralow steak'." [02:55.96]The meat industry wants meat producers and supermarkets [03:00.19]to voluntarily adopt the new description. [03:03.72]There are no legal requirements to make the changes. [03:07.60]But the Food and Drug Administration [03:10.69]is considering new rules that would require complete details [03:15.72]on labels about where meat was raised, and processed. [03:20.94]Meathead says the combined label changes [03:24.52]would be even more confusing to some people. [03:28.06]"What if there are two steaks side by side, [03:29.65]or three, Mexican, American, and Canadian, [03:33.08]which one they gonna pick up? [03:34.88]And then how do they respond to a piece of meat [03:39.30]from Shanghai, that's labelled Denver roast."
